Ingredients:
- 4 salmon fillets (6-8 oz each), skin-on or skinless
- 1 bunch of fresh asparagus spears, tough ends trimmed
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Zest and juice of 1 lemon
- 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)
- Salt and black pepper to taste
- Lemon slices for garnish (optional)
Instructions:
1. Preheat the Oven:
- Preheat your oven to 400°F (200°C).
2. Prepare the Salmon and Asparagus:
- Place the salmon fillets on one side of a large baking sheet.
- Arrange the trimmed asparagus spears on the other side of the baking sheet.
3. Make the Marinade:
- In a small bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, chopped dill, salt, and black pepper. Mix well to create the marinade.
4. Coat the Salmon and Asparagus:
- Drizzle half of the marinade over the salmon fillets and use a brush or spoon to evenly coat them. Flip the salmon fillets and coat the other side.
- Pour the remaining marinade over the asparagus and toss to coat them thoroughly.
5. Bake the Salmon and Asparagus:
- Place the baking sheet in the preheated oven and bake for about 12-15 minutes or until the salmon flakes easily with a fork and the asparagus is tender. Cooking times may vary depending on the thickness of your salmon fillets.
6. Optional Broil for Crispy Top:
- If you prefer a slightly crispy top on your salmon, you can switch the oven to broil during the last 2-3 minutes of cooking. Keep a close eye on it to prevent burning.
7. Garnish and Serve:
- Remove the baked salmon and asparagus from the oven.
- Garnish with lemon slices and additional fresh dill if desired.
